(Just something prevalent in Asia that you don't see in the Pork section of an American supermarket.)
 
I remember living in a guest house in Abergavenny, South Wales. The landlady would keep cuts of pork in the freezer, one of which was usually a pig's head. Whenever we had pork she would cook the head especially for Andy (from Co. Cork). He would eat the lot, snout and ears and all.
 
I've been told by Anthony Bourdain ( not personally) that the snout is the best tasting part of the pig to eat. We bar bq pigs ear and then cut the ear into little strips. Tastes like pork jerky, chewy as all hell. Good with Hong Thong and soda, the more Hong Thong the better
