I suspect they are reheating the ribs in a microwave, which loses heat quickly, in my opinion, once taken out. I doubt the ribs are being done straight off the BBQ grill. Plus, most ribs here are previously cooked, then later put in the refrigerator for later use. Microwaving them for serving doesn't do the job. You are basically heating the bone, which is cold, rather than the meat. JMHO. My opinion is certain foods should not be re-heated in a microwave.
